Their typical offering for example in Christchurch in 1995, of three basic flavours: a mixed box, salmon or vegetarian; has exploded into a smorgasbord of possible ingredients which can be combined in a myriad of ways. If you can’t find it in front of you it will be made for you on the spot. Or if your favourite needs to have something removed to suit your palate, whether it’s the cucumber or the capsicum, they’ll do that too. Menu innovations often come through customer input on social media which they value for the gems it can inspire, their double decker teriyaki chicken being a good example. “It was just an idea and we put it out there and it’s become a really popular product. Honestly, 99% of the time the customers are always right,” says Nick. That attitude, instilled into the brothers by their father, is no doubt one of the keys to their success. While it clearly didn’t happen overnight, as they celebrate their 40th Anniversary, St. Pierre’s Sushi’s 78 shops around the country are thriving. Initially focused on the main centres in recent years they’ve expanded into the provinces where their offerings are increasingly popular. Over the last six years they’ve opened several new premises from Invercargill in the south to the soon to be open shop in Hastings in the north. “When a St. Pierre’s has opened in these smaller regions people really appreciate the offer of freshly made food with a difference, that’s a bit healthier, a bit more modern and sophisticated, and of course delicious,” says Nick with a smile. A recent initiative in response to a post-Covid demand for more ‘grab and go’ style food, as Nick puts it, led to the first drive-through sushi in Australasia which opened in Onehunga in 2021. The second one will be part of what St. Pierre’s in Hastings has to offer. Situated on a corner site in the middle of town near the hospital they’re looking forward to providing their trademark fresh produce in a convenient form whether it’s for people on the go such as tradies, or parents who don’t want to have to take their children out of their car seats. One of the distinguishing features that it shares with the Onehunga Drive-Thru relates to orders through Uber Eats of Sushi and Bento Bowls. “They’re different menus from completely different departments under one roof, and managed separately, so it’s like KFC and Pizza Hutt, but you can have a delivery from both brands and we’ve made it so that you only have to pay one delivery fee through St. Pierre’s wherever both menus are available,” explains Nick. They’re looking forward to building their next drive-through in Palmerston North next year, and in the meantime Stead Construction are almost ready to hand over the keys so that Hastings can begin to enjoy everything St.Pierre’s Sushi has to offer.
