Hugh de Lacy In a diversification from Tamar Farm’s core dairying business, Chrissie and Richard Wright have developed a pasture-to-plate line of Red Devon beef products on their mid-Canterbury foothills farm, marketing them throughout the country in association with Christchurch firm Oceans North, whose own main business is seafood. Tamar Farms comprises 1850ha - originally six adjoining properties sited between two rivers – that is a self-contained unit milking 3250 Friesian and Friesian-cross dairy cows alongside the Red Devon herd of 340 cows. Tamar Farms finishes about a thousand head of beef a year. The farm is serviced by nearly 1100ha of irrigation from a combination of centre-pivots, a lateral and Roto-rainers using water from local irrigation schemes and a farm storage pond. It produces 1.5m kg/ms a year, but it’s the Tamar Beef operation that Richard and Chrissie are especially proud of. Tamar Meats’ Red Devon beef is marketed on the basis of the old English breed’s long-established high quality – it’s widely regarded as the best marbled and tastiest of the British beef breeds – which is in part the product of the breed’s calmness and docility. “Because of their docility they’re a very safe breed to farm,” Richard says. The cows calve in autumn and the progeny are taken through to two-year-olds when they are slaughtered by Ashburton Meat Processors, then processed by’ Netherby Meats or Ellesmere Butchery, with prime cuts sold to local restaurants and at the farm gate.
