| 5 REGIONAL DEVELOPMENT Winton- Ayrburn Ayrburn boasts a history dating back over 150 years and has undergone extensive restoration and revitalisation. SA Studio has left an indelible mark on the landscape of Central Otago with its work on the Ayrburn Domain Precinct project. Led by architect, Jessie Sutherland, the studio has helped to transform a collection of historic farm buildings into a vibrant destination, seamlessly blending heritage preservation with modern functionality. The Ayrburn Domain Precinct, unveiled in late 2023, features a range of dining experience including the Woolshed restaurant, the Cart Shed tasting room (a ectionately known as the ‘manure room’), the Cocktail venue Burr Bar and the Dairy, a boutique ice creamery. These establishments, along with a services annex housing essential facilities, now grace the beautifully landscaped grounds of the precinct. Central to the Precinct, which SA Studio is working on, is the restoration of the timber homestead named Billies, slated to become a high-end restaurant o ering a unique dining experience. Additionally SA Studio, is undertaking The Bakehouse, a multifunctional space encompassing a café, deli, pizzeria, and venue area, currently under construction. These developments not only breathe new life into the historic structures but also honour their rich agricultural heritage, says Jessie. “The heritage of Central Otago means a lot to me, as I have fond memories of time in my granddad’s woolshed. So working on these agriculture buildings, which is one of Historic buildings transformed the original farming homesteads of the Wakatipu has been very special; they have a story to tell and to be able to treat them with care and help make them into buildings the public can enjoy has been hugely rewarding.” SA Studio approached the renovation with meticulous care, collaborating closely with heritage consultants to ensure the integrity of the structures while seamlessly integrating modern amenities. Jessie says the project's success lies in SA Studio’s holistic approach, which prioritises collaboration with clients, consultants, contractors, and interior designers. SA Studio Ltd was founded in 2018 and is based in Cromwell, Central Otago. The practice has completed projects in residential, hospitality, and small-scale commercial and adaptive heritage architecture. Jessie says the Ayrburn Domain Precinct is a celebration of Central Otago's rich heritage.
