PEF is a physical technology based on power electronics which offers a non-thermal preservation alternative to heat pasteurisation, thus producing fresh-like foods without excessive loss of flavours or nutrients during processing. Barto says the new technology will provide Mc- Cain Foods with a huge reduction in energy, steam and water usage, and provide an enhanced quality of product. Wendy says McCain Foods is a vital part of the region’s food production sector, which also includes a diverse range of highly successful local operators such as Heartland Chips, Talbot Forest Cheese and Barker’s of Geraldine. Timaru is also heavily involved in New Zealand’s seafood industry. The port is home to industry leader Sanford, which is a major employer in the region with sev- eral fishing vessels based at the port and onshore production facilities.
