He started with Talley’s more than 30 years ago, progressing from factory floor to management. He says it’s a common story at Talley’s, where progression through the ranks is encouraged through learning best practice skills, from processing through to people management and the ins and outs of waste minimisation. Talley’s fleet of over 80 independent inshore fishing vessels land their daily catch at depots around the South Island, from Bluff to Picton. Once unloaded, the catch is processed at Talley’s plants in Timaru, Westport and Motueka for markets across New Zealand and beyond. Leon, who is based out of Motueka, says Talley’s inshore fishing vessels land around 25,000 tonnes of fish a year with the processing operation employing over 500 people. “We can process up to 20 different species on any given day, so there’s a large amount of variety within our production,” says Leon. Investing in the latest technology has kept Talley’s at the forefront of efficient, high-quality production. For instance, Leon highlights Talley’s recent acquisition of advanced water jet cutters. “These machines utilise x-rays to scan the fillet, locate the bones, and then use high-pressure water jets to remove the bone from the fillet.
