78 | Kaans Catering Supplies PRODUCTION Kaans keeps kitchens humming A new dry store has been built as part of the new development. from page 77 “We supply everything from fruit and vege- tables, meat, seafood, dry goods, packaging, chemicals — anything you would use in a commercial kitchen to cook or clean with we sell, apart from the hardware. “We don’t sell bowls and ovens and that kind of thing. “We’re wholesale only so our core custom- ers include universities and halls of residenc- es, hospitals, rest homes are a growing mar- ket, schools, fish and chip shops, restaurants, food caravans — even shearing gangs. “Anybody who cooks food commercially we supply to. We also have our own processing rooms for vegetables. “The rest homes buy all their vegetables prepared with carrots and potatoes peeled. We have our own butchery and specialist Asian division.” About two years ago Lindsay was faced with the decision to corporatise the business or focus on being a family business. “I could never go the corporate way — I’ve never been that way. I liked the side of having it as a family run business and being a bit more personal with your staff. “Your staff are the key to your business — you need good staff behind you and we have a good team.” Reflecting on what has underpinned his business success over the years, Lindsay has no doubt that an attitude of providing good service is key, but says it’s also about taking on a challenge then working out how the challenge can be achieved. “And you can; if you set your mind to some- thing you can make anything happen. Because we’re a family business, we don’t have a whole lot of permissions to go and do something.
