4 | Spirits going global T T from page 3 REGIONAL DEVELOPMENT Scapegrace Distillery “The three key pieces, reliant on our local terroir, which are key to the flavour of our whisky, are our grain and how we treat it, the location of our ageing and the water we use in our process. Grain-wise, we use locally malted barley that we have both smoked with local Manuka and un-smoked.” Scapegrace Distillery’s location exactly on the 45th Parallel, “which is not by accident,” is hugely influential, Daniel says. “This unique location experiences extreme seasonal variations; intense heat and dryness in the summer, and very cold winters. This means over a 12-month period there is considerable ‘talk’ and influence between our new-make spirit and barrels, providing a lot more depth, flavour over a shorter period of time. “The early signs with flavour development that we have seen over the past three years have been extremely promising.” Sustainability was a significant consideration in the design and construction of the new facility and the decision was made early on to use renewable hydro-electric power to run the boilers, while timber was incorporated in the structure of the distillery building, certified green materials were specified wherever possible and 7000 native trees have been planted on-site. Twenty people are currently employed by Scapegrace, with this number expected to grow as production is ramped up. The distillery is not yet open to the public, but Daniel and Mark are hoping this will be achieved this year.
