Canter Valley REGIONAL DEVELOPMENT From succulent free range turkey to boneless duck roast with apricot and orange stuffing, Canter Valley is a quality go-to source for consumers seeking gourmet poultry products. Founded in 1987, this leading Canterbury producer and supplier is a multi-species specialist offering a wide range of turkey, duck, quail, chicken and poussin options. Canter Valley’s products are sold into restaurant, food service and retail markets across New Zealand, as well as across the Pacific and into Japan. Their clientele includes commercial caterers, resthome providers, hospitality businesses, specialty food suppliers and cruise ship companies. Lachlan Dick and Kathy Guard, who have owned and operated Canter Valley since 2002, bring a background in sheep, beef and deer farming, as well as sales and accounts to their thriving company. Based in North Canterbury, Canter Valley employs 26 people and has a strong focus on innovation to meet changing consumer demands. Canter Valley recently teamed up with Dunedin’s Wild Fennel Co. to offer an inspired selection of handmade, gourmet seasonings for duck, chicken and root vegetables. These small-batch pantry staples have quickly become established as a popular new addition at Canter Valley’s online store. The company’s online sales grew significantly during Covid and continue to track well. “We had previously outsourced a festive sauce and that got us thinking about what other complementary options we could include,” says Lachlan. “Wild Fennel Co. are aligned with what we do and their samples passed our taste test with flying colours!” Joining the Canter Valley line-up this winter is another new taste sensation: Butterflied Duck with Peking Glaze, a super easy option for those with a penchant for duck with Asian flavours. “This is a ‘ready to go’ product that’s easy to cook and easy to carve.” Lachlan says Canter Valley’s Confit Duck Leg with duck fat (300g, two legs per pack) is another quick and easy choice for those who love a taste of duck on the menu. “All you need to do is heat them in the oven for quarter of an hour and they’re ready to eat. If you’re late home from work and have these in the fridge, it is a really convenient option.” Canter Valley Free Range Turkey is low in fat and high in protein with absolutely no additives. For those family get-togethers and dinner parties, Canter Valley’s online store offers Frozen Free Range Farmed Turkeys in various sizes, Turkey Roast with Cranberry and Apple Stuffing, Frozen Turkey Thigh Roast, along with frozen Turkey drums, tenderloin, nibbles, mince and more. For that perfect roast potato, Lachlan recommends trying out their duck fat product. Canter Valley raise their certified free range turkeys at two different sites in the Sefton/ Rangiora area. Animal welfare standards are rigorously upheld, with the turkeys spending their days roaming fresh green paddocks and enjoying a natural diet. An outside pen is used from the age of six weeks. At night, the turkeys are moved into sheds that shelter them from the elements and any predators. Consistently producing up to 35% breast meat, Canter Valley Turkey represents exceptional value for money, with an added convenience factor. For those living in urban areas, orders are delivered to the door. Canter Valley also breed and grow Japanese Quail – and supply quail eggs by the dozen too – and produce their own Poussin product, (with a poussin being a young chicken). Their delicious range of chicken and duck products are sourced from carefully selected contract growers.
